New gelato cafe opens at Mint in Rahway

Wholly Cow, a trendy new destination serving gelato and premium coffee, opened its doors in the ground floor retail space at the Mint, the luxury rental community in downtown Rahway, according to a Wednesday announcement from Fields Grade, which developed the Mint with partner Slokker USA.

Located at 1542 Main St., the locally owned cafe is the latest addition to the busting new dining, shops and services that have been introduced to Rahway in recent years.

Wholly Cow is the brainchild of Terra Guaba, a Rahway resident and nutritionist that saw a glaring need for a casual social oasis that would serve tasty treats and beverages and become a community gathering place from morning to night.

The 1,300-square-foot shop has been conceptualized to provide a welcoming ambiance, where plush couches mix with traditional table seating to accommodate customers seeking remote workspace and others relaxing with friends in a laid-back environment. Wholly Cow features a full kitchen and offers a variety of gelato items, including highly popular gelato sandwiches, as well as locally roasted coffee, cappuccino and cold brew. Plans are in the works to expand the menu to include bakery items.

The café is open from 8 a.m. to 11 p.m. Monday-Sunday.

“As residents of Rahway, we experienced firsthand the renaissance of its downtown and the addition of contemporary retail that’s created a cool New York City-type vibe,” said Guaba, who lives at the Mint with her husband. “What it lacked was an inviting establishment that was open late and where neighbors could join and socialize. After living at the Mint for a few years and walking by its retail suites countless times, my husband and I decided to inquire about leasing a space. Fast forward over a year and Wholly Cow has become a reality, fulfilling a dream to open a café that would bring people together and have delicious food options.”

“We are excited to welcome Wholly Cow to the Mint and congratulate Terra on its much-anticipated opening,” Robert Giannone, director of development for Fields Grade, said. “She has created a one-of-a-kind café in downtown Rahway where guests are welcomed with delicious gelato, great coffee and a warm, hospitable environment.”

Wholly Cow is one of several retailers at the Mint that are helping to foster the lively and diverse environment in downtown Rahway and drawing new residents to this Union County city.

Located at 84 Monroe St., the Mint’s newest building has experienced overwhelming popularity, riding a three-month wave of high leasing velocity that has resulted in only a handful of luxury apartments remaining.
